Course Learning Outcomes

  1. Differentiate between credible science-based sources of nutrition information and unreliable sources.

  2. Describe the digestion and metabolism of the macronutrients (carbohydrates, lipids, protein).

  3. Identify essential nutrients needed to maintain health & body function. Be familiar with symptoms of nutrient deficiencies and toxicities. Recognize food sources for each nutrient.

  4. Discuss the role of nutrition in relation to health and the prevention of chronic disease.

  5. Discuss the factors that contribute to energy balance and proper weight management.

  6. Describe and discuss the concept of Intuitive Eating and its impact on physical health.

  7. Evaluate the adequacy of a diet to maintain health utilizing nutrient density, MyPlate, the Dietary Guidelines, and Dietary Reference Intakes (DRIs).

  8. Evaluate food quality based on food labeling, nutrition labeling, and food safety practices.

  9. Apply course material to improve thinking & decisions regarding food choices and health.

  10. Analyze a dietary food record (using sample NutritionCalc reports).
